2025.03.12 Tacos in a hardshell, Taco power!

Whelp, she did it, the wife made tacos. Basically as good as you can get white-midwestern American style tacos. The old El Paso hard shell, with all the little fixings in bowls so you can make your own type of meal. Andy wants me to make sure I include that she made rice with a Mexican spice in addition to the ground beef, serrated cheese, home made salsa and guacamole, shredded lettuce, and sour cream.

It takes a bit longer to make as you need to fry the battered chicken balls in oil first and then bake them in the oven. It really does taste like we went to an American Chinese food restaurant though. I’m impressed.

Postscript: I have to come back and add another rating. As a leftover food that you can just stand in front of the fridge and plop one after another into your mouth - the rating is 🌮🌮🌮🌮🌮 5/5. Incredible.

Dinner Diary 2025.03.10

At dinner tonight, my wife mentioned wanting to record her favourite meals so she can recreate them easily. As an excellent cook, her challenge is remembering all the great dishes she makes. If only that were my problem when cooking. I offered to document them here for her reference. Welcome to the first Dinner Diary entry. Unless otherwise mentioned, all food is gluten-free for my benefit :)

Additional notes: The fish was cooked very well; if you cook till it is rubbery and ruin the texture, this meal could easily slide to a 3 or lower.

Post Script. Maybe I need to take a photo of the meal as well. And maybe change the name - Dinner Diary sounds kinda like a 15-year-old trying hard to sound smarter.
